Hardware and Software (Services) are two distinct things - Pixels are indeed Hardware, which were built and designed by Google. The software on it is modified by Nitrokey, specifically the Operating System used is GrapheneOS. GrapheneOS is based on (AOSP) Android. One of GrapheneOS' features is that all Google Software and Services are removed from the OS. This means that a Nitrophone is a Smartphone, which runs an Android, but without communicating non-stop with Google. This means there is out-of-the-box no play store, but there are various alternative app stores you can use, see: https://docs.nitrokey.com/nitrophone/
How can you ganranty that these phones keep working with the anmounced blocking sideloading?
this will only affect certified (stock) builds - custom android-based OS (like grapheneOS) can choose to implement this or not - and obviously this will not happen.
